Fish & chips have become a popular dish in restaurants in France over the last few years but I’m always disappointed. Jean Michel put his hand to it for the first time today with beer batter and blue ling and it was delicious!
Le fish & chips est de plus en plus répandu dans les restaurants français depuis quelques années mais je suis toujours déçue. Jean Michel s’y est mis pour la première fois aujourd’hui avec un appareil à base de bière et de la julienne. C’était délicieux!

I’m usually not one for fish, but I’d try it like that.
It looks great. The secret is to keep the batter very cold in my opinion.
